Fowles 'Ginger Price' Sparkling Rose NV

The Ginger Prince is a blend of red wine varieties, with the most predominant (95%) being Pinot Noir. We picked the fruit for this wine in the cool of a March morning, at lower ripeness levels than if we were making red table wine, so as to retain acidity and the subtle red fruit characteristics. The grapes were then pressed to give the wine it's light blush colouring, before the juices went through malolactic fermentation in stainless steel tanks.
