Description

Thalassitis cellar aged represents the aged vintage of Thalassitis, precisely expressing the potential of the traditional white variety of Santorini. For its production grapes are chosen exclusively from vineyards in the Episkopi, Akrotiri, and Pyrgos regions. The vines in these regions are almost 80 years old. The particularly low yield never exceeds 25 hl/ha.

The soil and the unique variety of Assyrtiko in combination with a specific winemaking style, create a rare, precious, and unique wine. With the aging process a complex and more expressive wine is born, Thalassitis, with gold colour, and tertiary aromas while maintaining high acidity and impressive freshness.

This wine generally is combined better with flavours of moderate intensity, where salt, brine, or oil predominate. Pour into a wide decanter half an hour before serving. You will definitely be pleased with the results.

Nose
Its colour is bright lemon-green. Its aromatic profile is of Santorini, with citrus fruits and especially lemon, with the peels of citrus fruits, with a sweet rose, and with the aromas of gunpowder.
Palate
On the palate, it's lemon with crunchy acidity, rich flavour, and a nice salty aftertaste.
