Adobe Sauvignon Blanc 2023
The fruit came from the Casablanca estate, where the vertically positioned vines produce an average yield of 11 tons per hectare. Fermentation took place with selected yeasts in our Maipo Valley winery. Temperatures were carefully managed to remain cool, with pumpovers and delicate lees stirring to reach the desired results. The wine was fined with bentonite and cold-stabilized before bottling to prevent tartaric precipitations in the bottle.
Sushi and pasta prepared with a seafood sauce or to share ass an aperitif with fresh cheese.
Light yellow color, clean and translucent. The wine shows on the nose citric notes of grapefruit and lime with subtle hints of white fruits and delicate herbs. It feels fresh, soft, and balanced on the palate. Serve it with seafood and non-fatty fish prepared with lemon, such as ceviche or others.
