Description
Hand-picked and hand sorted. Fermented in wooden 5T Cuves. 15-20% whole bunch, the balance destemmed. 5-6 pigeage and a similar number of remontage over 18-20 days. Matured in new and used 228L casks for 11 months and given a further 3 months on fine lees in vat before bottling.
