Fraser Gallop Estate Innovation Iced Pressed Chardonnay 375ml 2025
Established in 1999, Fraser Gallop Estate is at the heart of Margaret River’s Wilyabrup valley (20km) north of the town of Margaret River and six kilometres from the southwest coast of Western Australia. The Estate enjoys splendid isolation and a moderate maritime climate created by the Indian Ocean to the north and west.
Fraser Gallop Estate is proud to be a pioneer in Western Australia for this distinctive style of wine. While the use of Chardonnay in a dessert wine is rare, it feels only fitting in a region renowned for producing some of Australia’s finest Chardonnays.
In Canada and Germany, ice wine is traditionally made from grapes frozen naturally on the vine. Here in Wilyabrup, with our warm maritime climate, we take a different approach. We harvest our Chardonnay in pristine condition at peak ripeness, before any signs of shrivel or botrytis appear. The whole bunches are then carefully frozen before being gently pressed.
A distinctive and pure expression of Chardonnay, this dessert-style wine walks the line between indulgence and elegance. Perfect as an aperitif or a graceful finish to a meal.
Pale gold, clear and luminous in the glass, this wine captures the essence of late summer sunlight. The nose is layered and inviting, offering lemon oil, lime sorbet and kaffir lime leaf over deeper notes of poached pear, quince paste and a mineral thread of limestone that grounds the wine in its place of origin.
The palate is medium-bodied and textural, delivering flavours of lime crème brûlée, candied citrus rind, vanilla bean and honeycomb. While richly flavoured, it retains a beautiful sense of energy and precision, finishing long and refreshingly clean.
