Fowles 'Upton Run' Cabernet Sauvignon 2018
Fowles is nestled in the heart of the Strathbogie Ranges, where ancient granite boulders lie remarkably, and the land is rich with stories old and new.
We farm, we hunt, we prepare and we share with the aim of taking people on a culinary adventure, experiencing flavours from the source.
Fowles embodies an inherent respect for the environment with generations of knowledge and a passion to improve farming practices. Our farming future is built on a simple premise – harness the lands ecology to create more sustainable and resilient farming systems, producing quality in abundance.
After crushing, this wine was fermented at 23˚C, using a Bordeaux style red yeast, which prevents colour loss and enhances the aromas and flavours of the Cabernet Sauvignon grape. The wine was then matured for 12 months in 50% new American oak and 50% 1–year-old French oak.
Aromas of black fruits meld with cedar and rich vanilla.
A sophisticated combination of black and blueberries balanced by savoury leather, with extraordinary length and a fine, dusty finish.
