Production of Amontillado Vintage 2010: Unlike traditional sherry wines, aged through the “Solera and Criaderas” system, these vintage wines age statically. For their production, musts from old vines in the Pagos de Añina and/or Carrascal are selected, which are fortified to 15º for biological aging, or to 18º for oxidative aging. These wines are monitored during their aging, in which no intervention is made until the moment of selection for bottling. In contrast to the homogeneity provided by the Criaderas and Soleras System, where wines of different ages are methodically blended, each of these wines is unique and special. These wines reflect the harvest of the year and its particular climatic conditions, as well as the peculiar evolution of each one during its static aging.
Vintage System Production: For this Amontillado, premium musts were selected from the 2001 harvest. Fermentation was controlled at 17-22ºC and fortified to 15.5º, spontaneously beginning biological aging. Subsequently, a second fortification to 18º was carried out, beginning oxidative aging. In this case, the 2001 Amontillado vintage was the first in which a second fortification was performed, as currently, finos naturally transform into Amontillados through depletion.
Perfect as an aperitif accompanied by good cheese, ham or nuts. It pairs excellently with baked fish, seafood, smoked foods, fresh tuna, as well as mushrooms, game meats, spicy dishes, artichokes, asparagus, and salads.
Amber color. Very complex, pungent aromas with hints of toffee. On the palate, it is dry, mineral, saline, with reminiscences of dried fruits, nutmeg, and a very long and persistent finish.
