
Sentio Chardonnay 2025
Coral has ridiculous quality fruit this year. Three fruit sources for 2025 are mainly from Mark Scalzo's Piano Piano vineyard, which has formed the base for this wine for the past several vintages. This is complemented by Serengale fruit, which is nearby, and the welcome addition this year of van Malsem fruit from a vineyard on the remote northern edge of the Beechworth GI. At 300m, the van Malsem fruit brings lovely warm yellow fruit into the mix. All fruit was whole bunch basket-pressed to settle and then aged on solids in a combination of 20% new oak, two new French puncheons (500L), used Stockinger demi-muids (600L), and a number of barriques aged between 2-8 years old. No malolactic fermentation occurred this year.

Yellow flowers and salted nougat aromas.
Lovely lifted yellow and green nectarine, poached pear, lemon posset. with an almond/hazelnut undertone. Fennel and spice play a nice role in framing the fruit. Beautiful subtlety in the fruit weight for '25 beechy. Phenolics are fine and well shaped, creating good flow. The wine exhibits that Beechworth power, but loving the light feel the fruit has.
