
Sato L'atypique Riesling 2022
This wine is the blend of the 2 wines made of Riesling from the 2 vineyards. 68% from the Riesling of Red Shed Vineyard and 32% from Domain Road Vineyard. The grapes from the 2 vineyards were separately processed. The grapes were all destemmed to open top fermenters. 6 to 8 days cold soak and then natural fermentation started. Fermentation continued on skin for around 2 weeks and then post fermentation maceration for 7 days before pressed. The freerun and pressed wine was blended to a VC tank and then transferred to old French oak barrels for maturation. The wines had been aged for 11 months. Natural MLF was completed fully in this period in the barrels. The wine was racked with 5 ppm of SO2 added and blended in March 2023 and bottled on 13th April 2023 with 10 ppm of SO2 added. No enzyme, no additives, no fining and no filtration.
