Mayer Chardonnay 2025

Timo Mayer’s take on Yarra Valley Chardonnay is all about purity and focus. It’s unadorned, linear, and made with a deliberately hands-off approach that lets the fruit do the heavy lifting.

The winemaking here is incredibly strict when it comes to preserving freshness and clarity. The wine is fermented and aged in old hogsheads for six months before being transferred to stainless steel.

The 2025 release brings a little more roundness and generosity to the mid-palate compared to previous years, but make no mistake: it remains razor-sharp.
