We have moved in the wake of tradition, valuing the legacy of past generations. Sometimes we ventured new combinations and new solutions. It has been a slow, strenuous growth, with some disappointments, but overall very fulfilling. In it we have tried to cultivate a project of our own that would bring out the identity of our land and our character.
Hand-selected grapes from our hillside vineyards located in the Negrar valley: altitude from 200 to 450 metres . Average age of the vineyards 15/20 years. Pebbly soil with good limestone content.
Traditional Valpolicella grape varieties: Corvina, Corvinone, Rondinella, and other minor indigenous varieties.
The training system is the traditional pergola veronese, with a planting density of about 3,500 vines/ha. Grassed rows.
Destemming and soft crushing, fermentation on the skins for about 15 days at controlled temperature. Daily pumping over, punching down and delestage. Short post-fermentation maceration.
Maturation in oak barrels (mainly second passage tonneaux) for approximately 12-15 months.
Maturation in bottle for 6 months before release.
Wine that can accompany the entire meal. Ideal with white and red meats or mature cheeses.
Aroma reminiscent of ripe cherry and raspberry, with a light spiciness.
A wine with good structure and good persistence, it still retains freshness, softness and balance.
