We have moved in the wake of tradition, valuing the legacy of past generations. Sometimes we ventured new combinations and new solutions. It has been a slow, strenuous growth, with some disappointments, but overall very fulfilling. In it we have tried to cultivate a project of our own that would bring out the identity of our land and our character.
Estate vineyards located in the hilly area of the Negrar valley, at an altitude of about 350 metres, with south-southwest exposure.
The soil is clayey with good limestone content.
Grapes: Corvina, Corvinone, Rondinella and other indigenous varieties.
The training system is the Veronese pergola, with a planting density of about 3,500 vines/ha. Grassed rows.
Manual harvesting in plateux, with rigorous selection of the best grapes.
Natural withering for about 100 days in fruit lofts at controlled temperature and humidity.
Amarone Riserva is produced only in the best vintages.
At the end of the three years of the normal ageing period for classic Amarone, the best 25 hl casks are selected, which - instead of being bottled - continue ageing in large Slavonian oak casks for a further 4/5 years.
This is followed by a further 18-24 months of bottle ageing.
An Amarone at its best, with still a long life ahead of it.
Meat dishes, game, mature cheeses.
The aroma is complex and elegant: cherry, dried fowers, spices and a nuance of tobacco.
On the palate it is a wine of great structure, but at the same time of great elegance, with fine, silky and well-balanced tannins.
