We have moved in the wake of tradition, valuing the legacy of past generations. Sometimes we ventured new combinations and new solutions. It has been a slow, strenuous growth, with some disappointments, but overall very fulfilling. In it we have tried to cultivate a project of our own that would bring out the identity of our land and our character.
Estate vineyards located in the hilly area of the Negrar valley, at an altitude of about 350 metres, with south-southwest exposure.
The soil is clayey with good limestone content.
Grapes: Corvina, Corvinone, Rondinella and other indigenous varieties.
The training system is the Veronese pergola, with a planting density of about 3,500 vines/ha.
Grassed rows.
Manual harvesting in plateux, with rigorous selection of the best grapes.
Natural withering for about 100 days in fruit lofts at controlled temperature and humidity.
Destemming and soft crushing, maceration for about 7 days, then fermentation for about 3 weeks at controlled temperature, with daily punching-down and pumping- over. Delestage.
Maturation in oak casks of 5, 15 and 25 hectolitres for 30 months.
Maturation in bottle 12 months.
Meat dishes, game, mature cheeses.
The aroma is intense, complex and elegant: cherry, dried fowers, spices and a hint of tobacco.
On the palate it is a wine of great structure, but at the same time of great elegance. Fine and well balanced tannins. Great cleanness and persistence.
