Description

This is Pinot Gris made with the intention of highlighting the textural elements of this lovely variety.

Yoshi Sato makes this naturally with plenty of skin contact, some time in barrel and a good time on lees to round out the body of the wine and give you a little more flesh to hang onto.

This is a premium example of Pinot Gris for those who want to explore the full range of the variety.

Winemaking Notes: Red Shed Vineyard/ Defiance Vineyard. Soil: Alluvial sandy loam/ Silt loam over schist gravels. Viticulture: No pesticides, herbicides, systemic fungicides or inorganic fertilisers used. Harvest: Hand picked. 18 & 24 March 2023. Vinification: Natural yeast fermentation. Kept on skins for 29-36 days. No additives except for <15 mg/ sulphites before bottling. Maturation: 14 months in French oak barrels. Bottled: 24 July 2024 without fining or filtration. 3533 bottles produced.

Tasting Profile
palate

The palate is textured and slightly tannic, thanks to the skin contact, but balanced by refreshing acidity. Flavours of quince, baked apple, and ripe stone fruits are interwoven with zesty citrus and a touch of spice, such as cardamom and ginger. There is a pleasing mineral edge, providing depth and structure to the wine.

nose

On the nose, it opens with layers of orchard fruits like ripe pears and apricots, followed by subtle notes of orange peel, ginger, and a hint of wild herbs. There is also a delicate floral aroma, reminiscent of jasmine and honeysuckle, adding an extra layer of complexity.
