Description

Pol Roger celebrates its 175th anniversary with a very limited offering of old vintages of its iconic cuvées. Each bottle is adorned with manual labelling inspired by the original labels and then presented in a wooden case. The exceptional cuvée, created in 1975 as a tribute to the "old lion" (Winston Churchill), comes exclusively from Grands Crus already in production during his lifetime, from the three great Champagne (https://www.millesima.com/champagne.html) regions: Montagne de Reims, Vallée de la Marne and Côte des Blancs.

The Cuvée Sir Winston Churchill Vinothèque Edition 2002 undergoes rapid and gentle pressing, followed by two settling phases: the first at the pressing centre, then a second cold settling in the cellars. Alcoholic fermentation takes place at low temperature in temperature-controlled stainless steel tanks, with each grape variety and each cru vinified separately before blending. Malolactic fermentation is carried out on all the wines. The secondary fermentation and ageing take place in the cellars at a depth of 33 metres. All Vinothèque bottles are riddled by hand. After an initial disgorgement carried out during the initial release of the cuvée, the Vinothèque bottles are returned to the cellars for extended additional ageing and are no longer moved until their final release. Before this first disgorgement, the cuvée benefits from more than 10 years of ageing in the cellar.
