Bottle 1: Charles Heidsieck Blanc des Millenaires 2007 - (Champagne, France - 98 Points)
The year 2007 is anachronistic in its wine profile: it is reminiscent of the profile of the great Blanc de Blancs of the 1980s and 1990s, with restrained maturity and biting acidity. This year caused concern to begin with because everything was so early. Spring and bud break occurred before their usual time. Flowering started on May 25th. Poor weather made it difficult to care for the vineyard, but, at the same time, preserving a good acidity. A rather cool summer, combined with heavy rains just before harvest, made us forget the red-hot summers of preceding years.
Bottle 2: De Saint Gall Orpale Blanc de Blancs 2008 - (Champagne, France - 93 Points)
Orpale is without a doubt the most complex, accomplished wine of the Champagne De Saint-Gall portfolio. Always a vintage Champagne, it is the result of a highly unusual process: a portion of the grapes used to make this Blanc de Blancs do not undergo malolactic fermentation to preserve the freshness and mineral character of one of the best plots of the Côte des Blancs. An elegant wine with complex aromas, superb on the palate and with a long finish, it is a must.

In 1947, seven well-established and visionary winegrowers came together in a joint quest for ultimate perfection and founded Champagne Palmer & Co. The founders bought the cellars of a Champagne House in Reims in 1959. Over the years, the cooperative has spread past Reims and now owns an impressive 450 hectares of vineyards, over 200 of which are classified Grand and Premier Crus.
